Coffee 6-12 months post-harvest. Still excellent quality, with balanced flavors and good complexity. This is when most specialty coffee is consumed.
Past Crop
Coffee over 12 months old. Flavors become muted, acidity fades, and the coffee can develop woody or papery notes. Best avoided for specialty coffee.
